These are so good–hearty and filling. You can easily use whole wheat flour in them or add some wheat germ if you want. They are excellent topped with warm applesauce, black raspberry jam or pure maple syrup. They also make a nice supper option with sausage or leftover slices of ham.
2 c. milk
1 1/2 c. rolled oats
Combine and allow to sit for 30-40 minutes.
1/3 c. oil
2 eggs, beaten
1 1/2 – 2 c. flour
2 t. baking powder
1/2 t. salt
2 T. sugar or honey
1 t. vanilla
1/4 t. cinnamon (or not)
Add oil and eggs to milk mixture.
Add remaining ingredients; stir until moistened. Batter should resemble lumpy oatmeal. If it looks runny, add a little bit more flour. If it looks too thick, trickle in a bit more milk.
Cook on hot griddle until cooked through.
