Pumpkin Pie Oatmeal

The following recipe is from fellow Eat Cheap!er, Krystina Lipps. We will definitely be trying this one at the Hill household to use some of the abundance of winter squash we currently have on-hand! Thanks, Krystina!

From Krystina:  Just wanted to share a yummy cheap fall breakfast recipe. I always at least double the recipe because it’s such a hit at my house which is a big deal with a picky child. I call it Pumpkin Pie Oatmeal.

1c. milk or water

1/4 c packed brown sugar

1/4 tsp pumpkin spice or cinnamon

1 tsp vanilla…

1/4 c pumpkin puree or canned pumpkin

1 c old fashioned oats

2 tsp peanut butter(optional and covers pumpkin taste)

Mix everything except peanut butter in a sauce pan and bring to gentle boil. Reduce heat for 2-3 min. Add peanut butter if using. Serve while hot.

It’s a fall favorite at our house and at this time of year not expensive. I usually omit the peanut butter because it completely masks the pumpkin flavor and that’s the whole point of it for us. It’s cheap and relatively healthy.
