From Krystina: Just wanted to share a yummy cheap fall breakfast recipe. I always at least double the recipe because it’s such a hit at my house… which is a big deal with a picky child. I call it Pumpkin Pie Oatmeal.
1c. milk or water
1/4 c packed brown sugar
1/4 tsp pumpkin spice or cinnamon
1 tsp vanilla…
1/4 c pumpkin puree or canned pumpkin
1 c old fashioned oats
2 tsp peanut butter(optional and covers pumpkin taste)
Mix everything except peanut butter in a sauce pan and bring to gentle boil. Reduce heat for 2-3 min. Add peanut butter if using. Serve while hot.
It’s a fall favorite at our house and at this time of year not expensive. I usually omit the peanut butter because it completely masks the pumpkin flavor and that’s the whole point of it for us. It’s cheap and relatively healthy.
