Chili-Rubbed Pork Roast

The leftovers of this roast make really good carnitas!

Rub thawed pork with seasoning blend then brown on all sides. Place in a slow cooker on low for 8 or so hours until tender. This can also be done in the oven.

My rub includes:

1 t. salt
1 t. sugar
2 T. paprika
2 T. chili powder
2 T. garlic powder
1 T. cumin

This will cover three or four 3-lb. pork roasts. Feel free to adjust the seasonings however you want to make this  rub “yours”.
