Gingerbread Pancakes

We have enjoyed these for breakfast this morning with butter and applesauce.  They are quick, easy, cheap, low-sugar and yummy!  You can use whole wheat flour for a heartier texture.

1 1/2 c. flour
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 t. cinnamon
1/2 t. ground ginger
1 1/4 c. milk
1 egg beaten
1/4 c. molasses
3 T. oil

Sift together dry ingredients; set aside.

In large bowl, beat milk and egg until well-blended; stir in molasses and oil.

Add flour mixture to milk mixture, stirring just until moistened.

Pour batter by 1/3 cupfuls onto lightly greased HOT griddle.  Cook over medium heat until bubbly on top, then flip and cook until golden.
