Butterscotch Banana Bread

This sounded so weird to me, but one of my kids thought it would really be good.  She was right.  It is at its best served warm.  The recipe is one from Gooseberry Patch.


3 1/2 c. all-purpose flour
4 t. baking powder
1 t. baking soda
1 t. cinnamon
1 t. nutmeg
2 c. bananas, mashed
1 1/2 c. sugar
1/2 c. butter, melted
2 eggs
1/2 c. milk
11-oz. pkg. butterscotch chips, melted  (I only used half of a package because I’m cheap.)

Combine first 6 ingredients in a large bowl; set aside.

Beat sugar and butter in a large mixing bowl, beating at medium speed with an electric mixer until light and fluffy; add eggs.

Gradually add flour mixture to sugar mixture alternately with milk, beginning and ending with flour mixture, until blended.

Fold in melted butterscotch chips.  Pour batter evenly into two greased and floured 9″x5″ loaf pans.

Bake at 350 for an hour or so until toothpick inserted in center comes out clean.

Cool in pans 15-20 minutes; remove from pans to wire racks to cool enough to cut.
