When freezing, don’t add macaroni until just before serving.

2 c. ham, diced

1 onion, chopped

3 cloves garlic, minced

3 stalks celery, chopped

1 c. zucchini, chopped

2 qts. beef broth

1 (16-oz.) can kidney beans, drained & rinsed)

½ head cabbage, shredded

1 (15-oz.) can tomatoes

½ tsp. pepper

2 tsp. Italian seasoning

½ c. uncooked macaroni

Garnish:  Parmesan cheese


In oil or bacon grease, cook onion, garlic, celery and zucchini for 10 minutes.  Add ham, broth, beans, cabbage, tomatoes with juice, pepper and Italian seasoning. Simmer, covered, for 1 ½ hours. 

Add macaroni.  Simmer 15 minutes. 

Serve with parmesan cheese.
