Pepperoni Pizza Rigatoni

Here’s another easy one to just “dump” into the slow cooker.  It’s also very versatile, which makes it a winner for almost every family.

This is another great way to use up leftover meat, pasta and veggies.  For a REALLY quick prep, have your ground beef or sausage already browned in one-pound portions in your freezer to throw in the slow cooker.  Just add an hour or so cooking time if you add it frozen.

1 lb. ground beef or pork sausage, browned with or without onions and green peppers
8 oz. rigatoni (or ziti or macaroni or penne), cooked
2 c. shredded mozzarella cheese
10 3/4 oz. can cream of tomato soup
2 (14-oz.) jars pizza sauce
8 oz. sliced pepperoni
sliced mushrooms or black olives to taste

Combine soup and sauce with any mushrooms or veggies you want to use.

Put ground beef or sausage in bottom of slow cooker, then top with pasta, sauce mixture, pepperoni and cheese.  Cook on low for about 4 hours.
