Creamy Chicken & Broccoli

No one can adequately make the excuse that they have “no time to cook” when there are SO MANY recipes that just “dump” a few ingredients into a slow cooker and cook all day.  This is one such recipe.  This isn’t exactly a “cheap” recipe to make, but it is certainly cheaper than carryout pizza.

4 boneless, skinless chicken breasts
1 10 3/4-oz. can cream of chicken soup
2 c. milk
1/2 t. pepper (or to taste)
1/2 t. dried minced onion (or chopped, fresh onion to taste)
4 slices American cheese, diced
12-oz. pkg. frozen broccoli (or asparagus or cauliflower)
3 – 4 c. prepared rice (or pasta)

Put chicken into slow cooker.  Combine soup, milk and seasonings; pour over chicken.  Cook on low for 7 hours.

Add broccoli (or other veggie) and increase temperature to high.  Cook until broccoli is crisp-tender.

Serve over prepared rice or pasta.
