With planting season in our near future, I am starting to get my freezer stocked up for quick and easy meals. I’m roasting a turkey today with the intention of putting several meal-sized bags of meat in the freezer, along with some healthy broth. The slow cooker is full of pinto beans, onions, peppers and garlic for “refried beans”, which will go with our carnitas on Thursday, with the leftovers divvied up and tucked into the freezer as well. Tomorrow, I plan to bake a couple of big batches of muffins for the freezer to go with quick breakfasts of scrambled eggs and fruit.
I appreciate all of the options we have for “hands-off” cooking in the good old U.S. of A. It certainly makes planning ahead easier for this momma!
